To make umbelys of a dere. Take the umbelys of a dere blod & all perboyle hem in fresch broth then take hem up stale broune crustys of brede in the same broth then cut thy umbelys small & put hem in a potte to the same broth tryyd in a streynour sesyn hym ther with that they be kyndky rennyng do to pepyr canell & tempyr hit up with swete wyne put hit to the umbelys loke thy colour stond by the canell sesyn hit with salt & serve hit forth.
