To cure wine turned fusty. For a hogshead, take [some wine], ten ounces of sugar and half an ounce of milled berry [bay? juniper?], soak everything together, and put it in the barrel without stirring. Alternatively, put live coals in the tun, stopper it very well, and leave it for three days in this state.
