How to make sponge cake. Crush some sugar, mix it with flour, then whip some eggs, separate the yolk and the whites, for if you use the yolk, it won't be as white. Pass through a strainer the egg whites, then pour it onto the sugar and the flour, then add some rose water. Add lots of aniseed, don't add salt and don't crush it too hard, make some wafers and put it underneath, then pour it onto a baking sheet, add some coal; once hardened, take it out and slice it, then let it dry, but don't burn it. Serve it to your lord.
