Cow liver and kidney with black pepper. Wash it, put it on a skewer, peel the garlic, break it, add some black pepper and vinegar. If the vinegar is too strong, add some meat broth. Just cook it for a while, don't boil it, lest the onion loses its strength. Slice the liver and the kidney in a plate and pour the broth on top, serve it right away.
