Hen with black pepper dust. Wash it and roast it like the others. Prepare the black pepper dust: Peel a garlic, break it, pour vinegar onto it and add some black pepper; if the vinegar is strong, add a bit of beef water. When serving it, put it into a pot and let the black pepper stand on the fire. Don't let the black pepper dust boil, for it will take the garlic's strength. Pour it onto the hen.
