For to bake a Gournard. зe schall make a coffyn o[f] þe same lenthe þat þe gurnard is on, safe .iij. ynche or .iiij. þat зe sall turne it of þe gurnards tayle. зe schal ly his bely vpward, & put þerin rasyns of corans with peper & clowis & iij sponefull of rumney or oþer wyne, & if зe wyll, put in his bely a fresh ele.
