A fricase of Tripes.. LEt them be faire sodden, and sauce the[n] take the leanest and cut it in peeces, inch broad, frye them with butter or flats, and your sauce to bee vineger, pepper and mustard, being put a litle while in the friing panne with butter or flattes.
