Sfresurato. Get well cooked kid pluck, chop it up finely with parsley and marjoram, then put it all into a pot with good fat broth and pepper, saffron, eggs beaten with a slice of cured ham and a very little rosewater and verjuice, and a little sugar, and cook it well; when cooked, serve it up.
