Goat Kid in Other Ways. Clean a kid well and set it to roast, and have the spit come out its snout, and be careful not to burn it; for its sauce, get parsley and toast steeped in vinegar, with a clove of garlic and pepper, and grind everything together and temper it with verjuice or with wine syrup, making it tart or sweet as you wish.
