140. Fritter of New Cheese. You will take new cheese, which should be from sheep, and grind it in a mortar. And after grinding cast it in a tub, and cast on it a little flour well-sifted and cast within; take eggs and beat it all together; and then set a frying pan to heat with lard; and when it is well heated make some tartlets, and cast them in, and fry them slowly, and have honey and rosewater, and as [the tartlets] are fried, cast them in the honey, and then remove them to a plate; and cast upon them sugar and honey.
