LXIX - To seethe fresh fish, young hens, small or big birds in herbs. Take fish or poultry, nad when they are well cleaned let them seethe. Crush parsley and wheat bread, put over the fish through a sieve and let well seethe together. Add theretor fresh currants that they stay quite whole and unsweetened. If the broth is sour then make it sweet wtih sugar or honey, and flavour with pepper, ginger, saffron, nutmeg flowers.
