Yet another way to make good fine ypocras. Take five pints of red wine and wash in it three and a half ounces of turnsole. Squeeze it well with your hands. Then take of this wine and make it warm and thoroughly mix into it four ounces of brown sugar until the sugar is all well dissolved. Then mix all together in this aforesaid sugar four ounces of cinnamon which is fine and strong. Fine white ginger an ounce and a half, calamus, grains of paradise, cloves each eight grains. Coriander, rosemary, galingale ten grains. Run it through the sack as before.
