To Boil tench Or eel

To boil tench or [conger] eel to put in ieleye one shall kill it and take its entrails out and not remove its skin. Then scour it well and rub it well with a wisp of straw or hay or whatever you wish to use and take its slime off with hot water, with salt or with other things. Cut the eel in pieces small or large, as you wish. Item. One boils salt [conger] eel with its skin and one lays it thus in the jelly. But one may indeed take the skin off fresh eel if one wishes.
