To make roffioelen from apples and nuts together. Take apples and nuts; break them or grind them well together. Then take grains of paradise or ginger, cinnamon, and potsugar; mix this together very well. Then make dough as stands written before this. And make from it a round disc like a plate. Then fill the half of the round disc with the aforesaid dish [i.e. the apple and nut mixture]. Then cover it with the other half of the same round disc. And so one fries them in the oil until they are enough. When they are enough then one takes them out and one serves them with the pancakes at the end [of the meal] when one has eaten.
