To bake pameie in the oven. Take apples cut up and put in an earthen pot: that is, a bowl which is closed and a lid laid on top and let it simmer thus. Then one shall take it out into a bowl. Then one shall beat it very well from underneath with good butter. Know that no other spice serves [will do] here but ginger, cinnamon, mace, nutmegs, cloves, and potsugar. Mix these together very well with the apples. Then put it back in the oven so that it may dry well because it must be well-dried.
