Mallard in cyuey. Tak a mallard & pul hym drye, & swyng ouer þe fyre. Draw hym, but lat hym touche no water; & hew hym in gobettys, & do hym in a pot of clene water. Boyle hym wel & tak onyons & boyle, & bred & pepyr, & grynd togedere & drawe þorw a cloþ. Temper wyþ wyn, & boyle yt, & serue yt forþ.
