96. Ein gut geriht (A good dish). Ainen ohsen spec gemaht von eime kalbe gebraten und wol gesoten. geslagen daz gebrete an einander. und die swarten uz gekeret und gewunden in ein tuch. wol abe gewürtz. und laz ez wol erkalden. un dünne schineht gesoten vingers breit gemaht in einer fliezzende sultze. und versaltz niht. und gibz hin.

An ox(head), made of (filled with) fatty bacon (and) a roasted calf and well boiled. Mix the meat together. And the hairy head (was) turned skin out and wound in a cloth. Spiced well down. And let it cool well. And thin stripes (of all the meat) boiled, made a finger's width, in a flowing jelly. And do not oversalt. And give out.
