Per far minestra di maccaroni alla Romanesca *1
Impastisi una libra di fior di farina con oncie quattro di mollica
di pane bianco, che sia stata in molle in latte di capra tepido, &
quattro rossi d’uova, due oncie di zuccaro passato per lo setaccio, &
impastata che sarà essa pasta in modo che non sia troppo liquida,
& mescolata che sarà per lo spatio di mezo hora sopra una tavola
facciasene sfoglio con il bastone, lasciando asciugare esso sfoglio, con
il ruzzolo di ferro o di legno, taglinosi I maccaroni, & fatti che
saranno, lascinosi asciugare, & volendoli cuocere con acqua semplice,
faccioanosi cuocere in un vaso grande, ove sia acqua assai, & sale
abastanza, & quando l’acqua bollirà, ponganosi dentro I maccaroni,
percioche se si ponessero in acqua fredda andarebbeno al fondo, & farebbeno
una pasta, come fa ogni sorte di pasta tirata, bolliti che saranno per
meza hora, facciasis il saggio se saranno teneri, & non essendo lascinosi
bollire fin’ a tanto che siano ben cotti, & cotti che saranno habbiasi
apparecchiato un piatto grande d’argento, o di stagno, o di terra spolverizzato
grossamente di cascio grattato, zuccaro, & cannella, & fette di
provatura fresca, & pongasi una parte d’essi maccaroni che siano bene
scolati dall’acqua, & sopra essi maccaroni spolverizzisi cascio, zuccaro,
& cannella, & fetter di provatura, & bocconcini di butiro.
In questo modo se ne faranno tre fuoli, & si sbrufferanno di acqua
di rose, & si copriranno con un’altro piatto, & si lascieranno
stare su le ceneri calde o in forno caldo temperatamente per meza hora,
& si serviranno caldi.
To make a dish of Roman macaroni
Mix together one pound of flour with four ounces of crumb of white
bread that has been soaked in warm goats milk, and four egg yolks, two
ounces of sieved sugar. Blend this pasta together making sure that
it is not too wet, knead well for half an hour on a table. Roll the
dough into sheets with a rolling pin, leave it thicker than the one (recipe)
above. Leave this sheet to dry, then with a disc cutter of iron or
of wood cut the macaroni, making them thus, let them dry. You want
to cook them in simple water, make them cook in a large pan with plenty
of water and enough salt. When the water boils put in the macaroni,
because if you put them in cold water they will sink to the bottom and
become a single (lump) of pasta. As one makes every kind of thin
pasta, boil them for half an hour, making sure that they are tender, but
do not leave them to boil until they are well cooked. When they are
cooked have ready a large silver, iron or ceramic plate that has been dusted
heavily with grated cheese, sugar and cinnamon, and slices of fresh mozzarella.
And put on some of these macaroni, that have been well drained of water.
Above these macaroni sprinkle cheese, sugar and cinnamon, slices of mozzarella
and little pieces of butter. In this way one makes three layers,
and then sprinkle with rosewater and cover it with another plate, and leave
it in the hot cinders or in a medium hot oven for half an hour and serve
hot.
Per arrostire nello spedo, & su la graticola la spalla
di castrato*2
Volendo arrostire la spalla del castrato, è necessario che sia
frolletta, & maggiomente se il castrato sarà vecchio, &
vuol’ esser posta nello spedo senza esser rifatta, fregandola con spigoli
d’aglio battuti, & sale, accioche pigli l’ordore. Si potrà
ancho pirmo che si ponga nello spedo, empir di lardo battuto, agli, herbette,
casci grattati, uove, spetierie communi, & farli cuocere nello spedo
a lento foco, & cotta che sarà, vuol’essere servita cosi calda.
Volendola su la graticola, facciasi prima piu di meza alessare, & poi
spolverizzisi di sale, & fior di fiinocchio, & facciasi arrostire
su la graticola fin a’ tanto che pigli colore da amendue le bande, &
servasi cosi caldo con un saporetto d’aceto rosato, zuccharo, cannella,
garofani, & un spigoletto d’aglio.
To roast on the spit and on the grill shoulder of mutton*3
If you want to roast mutton shoulder, it is necessary to tenderize
the meat (let it age), especially if the mutton is old. You want
to set it on the spit without refashioning. Rub it well with crushed
garlic cloves and salt in order that it takes the flavor. Before
one puts it on the spit one can also stuff it with beaten lard, garlic
herbs, grated cheese, eggs and common spices. Let it cook on the
spit over a slow fire and when it is cooked it should be served as such
hot. If you want to make it on the grill, first half cook it by boiling,
and then dust with salt and fennel flowers. Let it roast on the grill
until it has taken a good color on both sides. Serve hot with a sauce
of red vinegar, sugar, cinnamon and a small clove of garlic.
Per far suppa di diversi frutti freschi*4
Piglisi la visciola, o marasca fresca, spiccata del zevolo, & facciasi
cuocere con poco vino, & zuccharo, cannella, & butiro, percioche
fa il sugo da se; & come si vedrà la visciola, o la marasca
crepata, si caverà, & si porrà in piatti con fette di
pane brustolito soffritto nel butiro sotto. Le persiche duraci che
non siano troppo mature si monderanno, & si taglieranno in fette, &
si faranno cuocere nel sugo della visciola, o marasca con un poco di vin
bianco, zuccaro, cannella, & garofani, & come saranno cotte, però
non disfatte, se ne farà suppa nel medesimo modo delle visciole.
Le prugne apertore non troppo mature, come saranno mondate con l’acqua
calda, o senze, si partiranno in due pezzi. Le damascene & d’altri
sorti si lascieranno intiere, & si sarà levar loro il bollo
con vin bianco, zuccaro, & cannella, & si servirammo in piatti
con fette di pane brustolite, & soffrite sotto, & la decottione
sopra. In questo modo si possono accommodar le lazzarole, & l’abicoccole.
To make broth of various kinds of fresh fruit
Take sweet or sour cherries that have been pitted and put them to cook
in a little wine, sugar, cinnamon and butter. They will release juice
from themselves, and when one sees that the cherries are starting to break
apart take them off (the heat). Serve them in plates with slices
of bread that have been toasted by frying in butter. Cling peaches
that are not too ripe one peels and then slices. Let them cook in
the juice of cherries with a little white wine, sugar, cinnamon and cloves.
When they are cooked, but not disintegrated one makes the dish on sops
the same as for cherries. Free stone plums that are not too
mature, can be peeled with hot water or not, one cuts them in two pieces.
The damask plum and other kinds one can leave intact, and one will lift
their boiling (juice) with white wine, sugar, cinnamon, and one serves
them in plates with fried bread beneath and the sauce above. In this
way one can also prepare Neapolitan medlars*5 or apricots.
